Spinach, Apple + Walnut Salad

Savour seriously savvy and tasty salads with all the flavours you love and the convenience you need. If you're looking for a simple, green salad to pair with your meal, then these low calorie salad tips can be the perfect mate.

Create your salad with leafy greens, your choice of a vegetable or fruit of a different colour (cut decoratively), and an accompanying cheese or (and) some freshly crushed or toasted nuts, tossed in a simple vinaigrette. YUM!

CHOOSE YOUR FAVOURITE FRESH GREENS FROM GROUP #1, TO MAKE A SAVVY SIDE SALAD WITH ONE OR TWO ITEMS FROM #2 AND / OR #3

Group #1 (soft)

  • Butter lettuce, Romaine or Cos Lettuce, Endive, lettuce, Mesclun lettuce, Rocket, any leafy greens

  • Kale, Mustard greens (any Collards), Spinach & Baby Spinach, Kohlrabi, Dandelion greens, Watercress

  • Herbs: Parsley, Basil, Mint, Chives, Coriander (Cilantro)

Group #2 (hard)

  • Asparagus, Artichokes, Jerusalem artichoke, Hearts of palm

  • Cruciferous, Broccoli, Beets, Carrots & Carrot greens, Celery, Onions, Fennel

  • Walnuts, Macadamia, Pistachios, Pecans, Pine nuts, Coconut, Hazelnuts, Brazil nuts

Group #3 (contrast)

  • Goat, buffalo or camel cheese, fetta or brie, Sheep cheese (plain), Buffalo mozzarella

  • Hard cheese (Romano, Parmesan, Pecorino), Mature Cheddar, Colby, Gouda

  • High-fat Swiss cheese, High-fat French/Italian cheeses (ie: triple-cream brie)

Spinach Apple & Walnut Salad

Ingredients

  • 5 cups baby spinach (I often add some rocket too)

  • 1 apple, cut into 2 inch matchsticks (or colourful bite sized pieces)

  • 1/3 cup red onion finely chopped or sliced

  • 1/2 cup walnuts

  • 60 g cheddar cheers grated

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

Instructions

  1. In a large bowl, place spinach, apple and onion (you could use currents for a sweeter salad)

  2. In a 8 inch cast iron skillet, toast the walnuts over medium-low heat until they are browned, about 10 minutes

  3. Add warm nuts to salad

  4. Drizzle oil and vinegar over the salad. I often use a home made vinegaratte

  5. Toss and serve

This Savvy Paleo Salad goes super well with a healthy quick dinner of fish, chicken, or steak.
